maybe try passata next time? I have one of the machines in this pic;

It is super fast way to process the tomatoes. You just blanche to loosen the skins, then throughthe machine to remove cores, skin and seeds. I do mine with a little fried onion, garlic and herbed too on occasions.

You then just bottle them in empty beer bottles and boil them up.

No idea where my sauce recipe is but I can dig that out sometime.

That sounds delicious, Jmoir. I have to admit our way is incredible lazy - just chuck entire tomatoes into the blender and blend. But the sauce is delicious so I'm reluctant to upgrade to anything that involves more fiddling! :)
